Will your diamond hole saws cut thru old wet plaster? I have multiple holes to drill for adding recessed cans.

Diamond hole saws would not be the best tool for cutting through the plaster. Diamond hole saws are best for brittle materials such as ceramic, porcelain tiles, granite, marble, glass, etc.
We recommend using Heavy Duty Bi-Metal Hole saws with a pilot drill and eject spring.
